What's for Dinner?

"Mom! What do we have to eat? " is a common sentence in our house.  Now with quarantine and my kiddos always at home, I can barely keep up with the pantry raids! 

Luckily I have a few weekly staples that are quick, easy and recycle-able!  Not to mention affordable! 

I find that Tuesday's are a great day to make one batch meal and "recycle" it into another dish throughout the week. I will use the leftover chicken to make lunch quesadillas or enchiladas for another dinner. 

Slow Cooker Chicken Tacos are my family's favorite! They are packed with flavor and all the ingredients are on the healthier side! No guilt!

Who doesn't love Sloppy Joe's?  I can remember my mom making this quite frequently and I can remember the smell in the house when she would make them!  It brings a smile to my face just thinking about it! My boys have grown to love them as well, but I do substitute turkey for beef.  This recipe is from FIXATE our Beachbody library. Some great variations we like to do...Add some swiss cheese, friend onions, jalepenos and serve with a side salad and it quickly becomes a household fav!

Lastly, my boys (ALL 3 of them) LOOOVE cripsy Chicken Wings!  But I don't like frying them. I use this recipe but of course like to add my flair. I will use wings instead of chicken tenders.  I smoke them in our smoker at 375 for about 15 minutes.  Then I mix  them in fresh garlic and Franks Red Hot Sauce, coat completely.  I place them under the broiler for 5-7 minutes until really crispy.  

These are great for snacks mid afternoon or even add a salad and make it a dinner.
